Why did Shiva cut off the fifth head of Brahma?

You have been given some wrong information. The Brahma of our universe appeared with four heads, not five.
There are many nonsense books and ideas. We reject them. We accept the authority of books like those referred to below, Srimad Bhagavatam and Chaitanya-charitamrta.
tasya nābheḥ samabhavat
tasmiñ jajñe mahārāja
Word for word:
tasya — of Him (the Supreme Personality of Godhead); nābheḥ — from the navel; samabhavat — generated; padma-koṣaḥ — a lotus; hiraṇmayaḥ — known as Hiraṇmaya, or golden; tasmin — on that golden lotus;
